A fresh and vibrant distillation of the Pacific Northwest, 100-seat Juniper Kitchen & Bar is a Cascadian-themed restaurant in the heart of Vancouver’s vibrant Chinatown neighbourhood. We believe good food creates community and we look forward to introducing you to our family.

The Space

The Space

As evidenced by the copper motif running throughout the space, Juniper was inspired by elements of a distillery. The space, designed by Simcic & Uhrich Architects, has been divided into four intimate and comfortable dining spaces that radiate from the central bar. In deference to the Juniper name, a playful copper light fixture — inspired by distillery pipes — winds through walls, floors and ceilings to illuminate each section.
Concrete, beech wood and steel are left in their raw state, highlighting each element’s natural texture. Artwork intimately connected with the Pacific Northwest features prominently, with a vertical installation of Gulf Island deadfall by artist Ricky Alvarez in the Woodsman Lounge and a First-Nations-inspired mural by Vancouver-based artist Ola Volo embracing the Bird’s Nest dining room on the mezzanine level.

The kitchen is lead by Executive Chef Warren Chow. Warren was born and raised in Vancouver and has previously worked in the kitchen of Vancouver Mainland and Okanagan such as The Pear Tree Restaurant in Burnaby and Terrace Restaurant located at Mission Hill Winery Family Estate in the Okanagan. He has also competed in various cooking competitions taking gold at the BC Food Expo in the Apprentice Category, Team Category and also The Healthy Chef’s Competition.

Warren started working at Juniper Kitchen & Bar in 2017 as the Sous Chef. He is now the Executive Chef leading a team of young and motivated cooks where they create Cascadian inspired, sustainable and locally sourced dishes.

Juniper’s bar programme is led by Max Borrowman. Max is a native of the Okanagan and learned his trade first in Kelowna and honed his skills at The Lobby Lounge of the Fairmont Pacific Rim Vancouver. Max has been in the food and beverage industry for 12 years and comes to Juniper after a year as Bar Manager at Main Street’s popular Torafuku, where he created the restaurant’s inventive and acclaimed cocktail program. Max has also won several regional and national cocktail competitions.

The focus of Juniper’s cocktail program is on locally inspired hand-crafted cocktails that use a signature selection of local and international small-batch spirits. Max has also incorporated First Nations and Spanish ingredients and flavours to the menu.

S. Michael Stadler, the ever present General Manager, brings over 32 years of experience in the hospitality industry to the helm of Juniper Kitchen & Bar. He has been fortunate to receive tutelage from a few well known and successful restauranteurs over the years with a major focus on service perfection and sales. He will tell you that he has had the opportunity to prepare steak tartar, caeser salad, crepes suzette and de-bone dover sole; all table side. He has opened thousands of bottles of wine, he has poured hundreds of different beers and mixed many a wicked martini.

Rather than just serving the guests, Michael’s goal at Juniper Kitchen & Bar is to offer to each person coming through the door the full experience. On any given service you will find him hands on aiding the effort to bring to the guest the finest product with unequalled service.
