As evidenced by the copper motif running throughout the space, Juniper was inspired by elements of a distillery. The space, designed by Simcic & Uhrich Architects, has been divided into four intimate and comfortable dining spaces that radiate from the central bar. In deference to the Juniper name, a playful copper light fixture — inspired by distillery pipes — winds through walls, floors and ceilings to illuminate each section.
Concrete, beech wood and steel are left in their raw state, highlighting each element’s natural texture. Artwork intimately connected with the Pacific Northwest features prominently, with a vertical installation of Gulf Island deadfall by artist Ricky Alvarez in the Woodsman Lounge and a First-Nations-inspired mural by Vancouver-based artist Ola Volo embracing the Bird’s Nest dining room on the mezzanine level.

Juniper’s bar programme was created by internationally acclaimed bartender Shaun Layton and is now being continued by Max Borrowman. Max is a native of the Okanagan and learned his trade first in Kelowna and honed his skills at The Lobby Lounge of the Fairmont Pacific Rim Vancouver. He comes to Juniper after a year as Bar Manager at Main Street’s popular Torafuku, where he created the restaurant’s inventive and acclaimed cocktail program.

Under Max’s hand, Juniper’s signature selection of local and international small-batch spirits and revolving list of curated gin & tonics will remain. However, Max will expand upon the existing bar program and add new cocktails with a historical flourish, incorporating First Nations and Spanish ingredients and flavours to the menu.
